Ingredients
- 60 gr. of butter
- 2 eggs
- 25 drops of liquid sweetener
- 1 spoon of grated lemon rind
- 1 light natural yogurt
- 1 cup of flour
- Half cup of cornflour
- 2 spoons of baking powder
- 1 cup of carrots slightly grated
Preparation
Beat the butter, add the eggs, one by one, the lemon grated and sweetener.
Incorporate the light natural yogurt, the cornflour, flour, baking powder, and grated carrots. Mix it good and put it into a baking pan, previously buttered.
Take it to the oven to moderate temperature for 40 minutes aproximately. The time of cooking will depend of the oven, therefore be alert. A good way to know if the cake is ready, is introducing a knife, and if it comes out dry, your carrot cake is ready.
Take it out of the baking pan and let it cold. You can decor it with some sugar.
